Vanilla sugar is an aromatic sugar that is obtained by mixing crushed vanilla pods with powdered sugar. It has a pleasant vanilla flavor (weaker than vanilla) and a sweet taste inherent in ordinary sugar.
Usage: vanilla sugar is used to make sweet dishes: pastries, desserts, puddings, drinks. It is added to the dough before baking, in hot drinks, desserts at the rate of 4-8 g per kilogram of the dish. Usage: gelatin is added to salty and sweet dishes, used in preservation. Before use in cooking, it is soaked in cold water, and after the raw material swells, it is introduced into a mass or liquid (base) heated to 60-70 ° C and thoroughly stirred.
